About The Meat Room

Welcome to The Meat Room, artisan butchers who are passionate about food and working with local producers of pork, lamb and beef. The Meat Room provides bespoke butcher services  and work with producers to deliver exceptional products that are specific to their needs.

James is not your average butcher, he is fanatical about traditional Italian food and seeks to master it. He has spent many hours with his extended family learning the art of salami and sausage making as well as passata, pizza and wine. He also travels internationally and locally to Italian food festivals to uncover new ways of preserving, preparing and cooking.

James is passionate about sharing his knowledge, you can learn just about anything you want to know about traditional salami making, sausage making or butchering.  Throughout the year The Meat Room presents a number of courses, so that you and your friends can learn these Italian traditions. All courses are limited to 10-12 participants and it is ideal for group bookings or work team building events.

If you’ve attended a course and love making salami at home, check out our online store where you can purchase everything that you need to get you started and keep you going. The Meat Room can assist with finding the best salami pigs for you to use, please contact us by April each year to ensure you get the right pork for your needs.

If you prefer to have your small good prepared by  The Meat Room you can order your salami, chorizo, pancetta, prosciutto fresh from The Meat Room and you can dry them at home. The Meat Room can access many breeds of pork that is locally grown in Victoria and can guide you through the selection and drying process. Orders must be received by January each year, please contact us for an order form.
